Ciao everyone! Long time no see...Last time I wrote I was in Singapore and now I'm living in Perth, Australia. I moved here just a few months ago for work and love as well, as my partner is from here. I'll share more with you about my new life as I get adjusted. In the meantime I want to share a recipe that I had never tried before but that in the few months that I've lived here I've already done twice. Yes, it's that good. It's the italian Tiramisu, so delicious that you'll want to eat the whole thing. I made it for my partner's family for Christmas, and then again for my birthday last week. For Christmas I made a big tray because we had many people, but for my birthday I only made a couple of single portions with the leftover mascarpone that I had in the fridge, just re-proportion the ingredients if you want to make single portions or just a smaller tray.
Here's the recipe if you are making a big tray.
Ingredients (this is for about 12 people):
400gr of savoiardi biscuits (ladyfingers)
3 cups coffee (I used decaf instant coffee)
1kg mascarpone
8 medium eggs
200gr white sugar
cocoa powder
Instructions:
Separate the yolks from the egg whites, make sure there's no trace of yolk in the whites. Beat the yolks with the sugar until fluffy using a mixer, then slowly add the mascarpone and keep mixing. In another bowl beat the whites until very stiff with a mixer, but wash the mixer attachments if you used it with the yolks. You can also place the attachments for 5 minutes in the freezer, this will help the whites get stiff faster. Then you can incorporate the whites to the rest of the mix, but be very gentle, mix by hand with a spatula.
Prepare the coffee, you can use the moka (italian coffee maker), or the instant coffee, which is what I did to make it easier. I also used the decaf coffee because if I drink coffee after dinner I can't sleep and I wanted to be able to enjoy my tiramisu at night too. So I did 3 cups of water for 5 teaspoons of instant decaf coffee, and added 1 teaspoon of sugar. Wait for the coffee to get cold.
Now, place a generous spoonful of cream on the bottom of a baking pan and spread it evenly. Then soak the ladyfingers for a few moments in the cooled coffee, first on one side and then the other. Arrange the soaked ladyfingers on top of the cream, side by side, to create the first layer, over which you will spread part of the mascarpone cream. Make sure to level it carefully so that you have a smooth surface. Continue to arrange the coffee-soaked ladyfingers, then add another layer of cream. Level the surface , sprinkle it with unsweetened cocoa powder, and allow it to set in the fridge for a couple of hours, or even better, overnight. Enjoy your delicious tiramisu!
